Avukma

(Avukma - Mediterranean Region)

Avukma
1 small onion, finely chopped
2 medium sized tomato, peeled, chopped
1 small sized cucumber, chopped
1 cubanelle pepper, finely chopped
1/4 cup parsley, finely chopped
2 leaves of mint, finely chopped
5-6 tbsp extra virgin olive oil
1 tbsp lemon juice

Garnish:
Ricotta cheese

Crushed the onion with 1 tsp salt. Add the rest of the salad ingredients, toss in a medium sized bowl. Place in a serving dish and sprinkle the cheese all over.
