Long Beans in Olive Oil

(Antakya Usulü Taze Börülce (Libye) - Antakya - Mediterranean Region)

Long Beans in Olive Oil
250-300 g long beans or Chinese beans, wash, trim both ends
1 small onion, sliced
2-3 tbsp extra virgin olive oil
1 large tomato, peeled, diced
1 small red Bell pepper, diced
1 tsp red pepper paste
1 tbsp crushed tomatoes, canned
1/2 tsp sugar
Salt
Pepper

Place all the ingredients in a medium-size pot. Cover and cook until the beans are tender at low heat. Let it cool down first.

Place the "Long Beans in Olive Oil" on a serving dish. Drizzle some extra virgin olive oil over the top. Serve at room temperature or chilled with the any kind of pickled vegetable.

I like this recipe so much. I would add tomatoes but I wouldnt think of adding peppers.Love the ingredients and it's a must try one day.Cheers

I have too many long beans growing in my garden besides onions, tomatoes and cubanelle peppers (a great substitute for the red pepper). Thank you for providing this recipe at the perfect time. It is so easy and so delicious. I will blanch and freeze beans and in the winter, cook the rest of the ingredients and add the blanched beans at the end. I hope it is as good.
