Borani

(Borani - Gaziantep)

Borani
~150 g ground beef
1 small onion, chopped
2 tbsp butter
1/4 cup black-eyed peas
2-3 tbsp canned crushed tomatoes
1 or 1 1/2 cups warm water
2 small size beetroot, boiled, peeled, cut in bite size

Boil the black-eyed peas in 2 cups of water until softened (for about 20 minutes), drain and rinse.

Saute the ground beef with onion and butter. When the colour of ground beef turns to light brown, add the black-eyed peas, crushed tomatoes, water, salt and pepper. Cook for about 20 minutes.

Add the beetroot, cook for 2-3 more minutes, turn the heat off. Serve the Borani while still warm.

Hi, Binnur!
Thank you again for the interesting recipe.
It has all I like: meat, beans, beets..
Do we need to soak beans first or we can boil it as it is?

The black-eyed beans don't need to be soaked like kidney beans or chickpeas.

It can be served with rice pilaf, bulgur pilaf or bread on the side:)

Hi Binnur,
This stew or soup is very delicious indeed. I will definitely try your version. In Antep they add greens as well like kale/pazı (which they call pancar)
