(Mercimekli Katma - Mediterranean Region)
1/4 cup green lentils, soaked in water overnight, rinsed
1/3 cup Turkish bulgur, medium or large grain
1 cup water
Cumin
Salt
Pepper
~
1/2 cup yogurt, plain
2-3 fresh mint leaves, chopped
Paprika
Extra virgin olive oil
Place the green lentils, bulgur, water, cumin, salt and pepper in a medium-size pot. Cover and cook at low heat until all the water evaporates. Let it cool down. Cover it with the plain yogurt. Sprinkle some paprika and chopped mint leaves and drizzle some extra virgin olive oil over the top.

This looks WONDERFUL! I have a friend that has Hashimotos disease and is not eating nightshade family foods, which are very common to Turkish food. Too bad I found this recipe right when it started getting cold outside! LOL! I'm going to save the recipe for a refreshing summer treat. I LOVE your site! Thank you! :)
Thank you, Kristine:) You will find more dishes without nightshade foods in the 'Vegetables" section. I hope your friend will like them:)
